The bartender’s name is Charles. If you ask him, he’ll tell you that he’s been working at the Angel’s Share for over a decade. He works at the bar most nights, but sometimes Diluc will cover his shift.
By speaking to Charles, you can learn a bit about Mondstadt’s wine industry and the types of wine that exist in Teyvat. He’ll tell you that Death After Noon is Kaeya’s favorite wine, and that Fire-Water is the name of a particularly strong wine from Snezhnaya.
